. I designed CLOS MONTELS as a round, silky wine with ripe red fruit flavors. .CLOS MONTELS is a 3 ha vineyard situated in the Languedoc area. It is close to Pezenas, Herault (34). . 2 ha are located on the Caux hillsides. The last one remains between the Roujan and the Neffies hillsides, mainly Syrah and Carignan, on argilo-calcareous grounds. . The Syrahs come from Caux. One was planted in year 2000, the other in year 1990. Both are on wires. . One carignan from Caux was planted in year 1961. THe other ones, between Roujan and Neffies, were planted in the 50's, 60's and 70's.		. All Carignans have gobelet cutting. . We try to handle our vines as close as possible to the nature. As a result, grapes are self limited to 30-50 hecto/ha. . We let the fruit ripen as long as possible. We cut it manually and handle it in small boxes to our winery. Then, we despemm and crutch separatly our different varieties. . We may use for our carignans carbonic maceration when needed. . We also vinify part of the crop in oak barrels in order to soften it rather than the oak taste. . We bottle CLOS MONTELS in the winery.
